Meno Jay prijal až keď sa rozhodol pre hereckú kariéru. Javier vyrastal v Montebelle so staršími bratmi Michaelom a Gabrielom a mladšou sestrou Ameliou. Mladí Hernandezovci sú už treťou americkou generáciou. Jayovi prastarí rodičia kedysi emigrovali z Mexika práve do Kalifornie.
Javier maturoval v roku 1996 na Schurrskej strednej škole a plánoval kam ďalej, kým mu jeho plány neskrížil manažér hereckých talentov Howard Tyner. Aj tomuto stretnutiu pomohla obrovská náhoda. Jay sa viezol vo výťahu v jednom z mrakodrapov v Los Angeles, keď na jednom poschodí pristúpil práve Howard. Hispánsky výzor mladíka vo výťahu ho hneď zaujal a spočiatku nesmelo pôsobiaceho Hernandeza napokon presvedčil, aby to skúsil v Hollywoode. Tyner zapísal Jaya do hereckej školy a poslal jeho fotky castingovým agentom. Úspech na seba nenechal dlho čakať.
V roku 1998 sa po prvý raz objavil na televíznych obrazovkách stanice NBC v seriáli Hang time, kde si zahral zanieteného mladého basketbalistu. O rok neskôr vystupoval ako roznášač pizze Eddie v šou hudobnej stanice MTV – Undressed. Prvú veľkú filmovú úlohu si však zahral až po boku Kirsten Dunstovej v teenagerskej romantickej komédii Crazy/Beautiful (Bláznivá, krásny).
Z neznámeho hispánskeho mladíka sa behom noci stal sexsymbol Hollywoodu. Hernandez sa vďaka tomuto filmu stal jedným z najžiadanejších mladých hercov v celom filmovom priemysle. V roku 2002 si zahral aj v disneyovskom projekte The Rookie (Nováčik), kde si opäť zahral basketbalového hráča. O dva roky neskôr zažiaril v ďalšom športovom filme, ktorý bol nakrútený podľa skutočnej udalosti Friday Night Lights (Svetlá piatňajšej noci), kde pre zmenu stvárnil stredoškolského amerického futbalistu.
V roku 2006 si zahral hlavnú úlohu v kasovom trháku, v horore Hostel, ktorý sa natáčal prevažne v Českej republike, no fiktívny dej sa mal odohrávať práve na Slovensku. V tom istom roku sa objavil aj v dráme World Trade Center a dá sa povedať, že Jay sa definitívne stal hercom prvej kategórie. V súčasnosti pracuje na pokračovaní Hostelu.
Jay Hernandez sa často objavuje v rôznych rebríčkoch o najsympatickejšieho muža Hollywoodu a zakaždým sa umiestňuje poriadne vysoko. No jeden z najsexi mladíkov Hollywoodu už nie je voľný, minulý rok sa oženil. Jeho ženou sa stala Daniella Deutscherová, herecká kolegyňa, s ktorou sa zoznámil pri natáčaní seriálu Hang Time.
